  2. Mix: Evenly distribute the seasoning over 25 lbs (11.34 kg) of meat. Blend thoroughly until the seasoning is fully incorporated into the meat.
  3. Bind: Gradually add cold water or crushed ice (up to 1L for 25 lbs of meat) while mixing, ensuring a smooth and sticky texture. Adjust the water as necessary to achieve the desired consistency.
  4. Stuff: Stuff the seasoned meat into your choice of casings or press into patties. Ensure an even fill without air pockets for optimal texture. *note: Extra water may be required to make stuffing smaller breakfast sausages due to the pressure required.
  5. Chill & Cook: Refrigerate the sausages for a few hours before cooking or freezing to allow flavours to develop.
