Instructions:
- Grind: Grind your preferred cuts of pork (or a pork-beef blend) to your desired consistency. Traditional Hot Italian sausage is best with a medium to coarse grind.
- Mix: Evenly distribute the seasoning over 25 lbs (11.34 kg) of meat and mix thoroughly to incorporate all the flavours.
- Bind: Slowly add 750mL of cold water while mixing to help distribute the seasoning and improve texture. Add more water as needed to achieve the perfect consistency.
- Stuff/Press: Stuff into natural hog casings for traditional Italian sausage links, or press into patties for a versatile option.
- Rest (Optional): Let the sausage rest in the fridge for a few hours before cooking to enhance the flavour.
