Description:

A true classic, Summer Sausage is a well-seasoned, semi-dry sausage blend designed for 25 lbs (11.34 kg) of raw meat emulsion. This mix delivers a rich, savory flavour with balanced spices, a hint of garlic, and a traditional texture that makes it perfect for smoking and curing.

Instructions:

  1. In a large mixing bowl or meat mixer, evenly distribute the Summer Sausage seasoning over the raw ground meat and fat (25 lbs of meat to 720g of seasoning).
  2. Add the included FS Cure at a rate of 40g per 25 lbs of meat (or 8g per 5 lbs for smaller batches).
  3. Mix thoroughly until the seasoning and cure are fully incorporated into the meat.
  4. Stuff the mixture into your casing of choice, ensuring a firm, even fill without air pockets.
  5. Chill the sausages in the fridge for a few hours to allow the flavours to develop before smoking or cooking.

Ingredients:

Salt, Toasted Wheat Crumbs, Spices, Sodium Erythorbate, Garlic, Sodium Nitrite. (Cure packed separately. Use FS Cure packet for precise measurements: 40g for 25 lbs or 8g for 5 lbs.)
