Instructions:
- Grind: Grind your choice of meat to your preferred texture—coarser for a more rustic sausage or finer for a smoother bite.
- Mix: Evenly distribute the seasoning over 25 lbs (11.34 kg) of meat. Mix well to ensure all the seasoning is incorporated throughout the meat.
- Bind: Slowly add 1L of cold water (for 25 lbs of meat) to achieve the desired consistency, mixing continuously until the mixture is smooth and tacky. Add additional water if necessary.
- Stuff: Stuff the sausage mixture into casings of your choice, making sure to fill evenly and remove any air pockets.
- Chill & Cook: Allow the sausages to chill in the fridge for several hours for the best flavour development before cooking.
