Instructions:

  1. Grind: Grind your choice of meat to your desired texture, depending on whether you want a coarser or finer sausage.
  2. Mix: Evenly distribute the seasoning over 20 lbs (9.07 kg) of meat. Mix well to ensure the seasoning is fully incorporated.
  3. Bind: Gradually add 750mL of cold water (for 20 lbs of meat) to achieve a smooth, tacky consistency. Mix thoroughly.
  4. Stuff: Stuff the sausage mixture into casings of your choice, ensuring even filling and removing any air pockets.
  5. Rest: Allow sausages to rest in the fridge for several hours before cooking.
  6. Optional Cure (For Smoked Sausage): Add F.S. Cure (Sodium Nitrite) if you plan on smoking the sausages. Follow the specific instructions for the cure to ensure proper preservation and color.
